Chicken Satay Skewers
Preparation time - 1 hour
Cook time - 15 minutes
Ingredients:
180g chicken fillet, sliced
80g onion, sliced
80g mango, sliced
80g cucumber, sliced
4 tbsp Yeo’s Satay Sauce
2 tsp Light Soy Sauce
3 tbsp coconut milk
2 tsp honey
Instructions:
1. Prepare your chicken by marinating it in light soy sauce for 1 hour
2. Dice your cucumber, mango and onion.
3. Mix Yeo's satay sauce, light soy sauce, coconut milk and honey together in a bowl and set aside.
4. After your chicken has marinated, thread the chicken cubes onto the skewers and grill each side for about 5 minutes or until the chicken is thoroughly cooked.
5. Heat up your satay sauce, soy sauce, coconut milk and honey to serve as a dipping sauce.
6. Plate up your onion, mango and cucumber along with your chicken skewers and dipping sauce.
